The fur from its eyes down, and on its feet, is white, whereas the rest of its legs, and its trunk, are covered with brown fur. It has the ability to curl up into a ball when frightened, as it does when Aang tries to approach it. Nothing else is known about it.
Badger Mole
First Seen: Chapter 2, Book 2, in the Cave of Two Lovers
An emormous animal, that appears larger than even Aapa, the badger mole's entire body area is a mix of badger and mole. It's fur is brown, though it's face is covered in white fur, and there is a long black and white stripe running the length of its back. The Badger Mole hunts Wolf-Bats, and is capable of earthbending. It becomes calm and peaceful when music is played.
Bear (Bosco)
First Seen: Chapter 14 Book 2, at the Earth King's Party
One of the few animals we see in all of Avatar that is not a mix of two real world animals, "Bosco" is the Earth King's pet, and they appear quite fond of each other. In addition, he apparently has "animal instincts" that can sense danger, though they seemed not to work to well in "The Crossroads of Destiny".
Blue Jay
First Seen: Chapter 8, Book 2, when it lands on Aang's head
This bird is primarily blue, with shades of light blue and darker blue, mixed with some white, scatter over its body. It is also one of the few animals not the mix of two, and nothing is known about it.
Boar-Q-Pine
First Seen: Chapter 16, Book 2, when one ambushes Aapa
A large animal, not quite the size of Aapa, it's body is clearly based on a boar's whereas its "fur" appears to actually be covered in points like a porcupine. A pair of white tusks emerge from its head, and its head appears to be very disproportionate to the rest of its body.
Buffalo Deer
First Seen: Chapter 18, Book 1, when waterbenders ride them
Not very large, but big enough to be ridden by waterbenders, this animal has hooves and a general body shape like a buffalo, and horns like a deer. Its fur is primarily a light shade of gray, except for on its belly, lower legs, and neck, where it's white.
Bull Antelope
First Seen: Chapter 15, Book 2, when Aang relocates Ba Sing Se's zoo
With a large and muscular body of a bull, and the horns clearly taken from an antelope, this animal is covered primarily in a dark, brown fur. Its legs, its eyes, and the tip of its nose are covered in white fur. Nothing else is known about it.
Butterfly
First Seen: Chapter 6, Book 1, near the village
A small, yellow and orange butterfly. That's pretty much it. It doesn't appear to have any powers, or bending abilities to speak of, and is probably just something that was thrown into the show without particular reason, but to make Avatar seem a little more realistic.
Buzzard Wasp
First Seen: Chapters 10 and 11, Book 2, in The Desert
Disgusting looking creatures that appear to be aggresive and predatory, these animals attacked Aapa in Chapter 16, and the BoomerAANG Squad in Chapter 11, when the group ventured into their home. Aang killed one that tried to take Momo, and all it took was a small blast of air, so they don't appear to be particularly tough.
Canyon Crawler
First Seen: Chapter 11, Book 1, in the Great Divide
The large, predatory animals that prowl the canyons of the Great Divide, it's size is second only to its strength. It has over a dozen eyes, and the parts of its body not taken up by its feet or mouth are covered in brown fur. It is strongly attracted to any food, and can apparently sense it from anywhere in the Divide. It also has the ability to climb straight up and down canyon walls, hence its name.
Bearded Cat
First Seen: Chapter 5, Book 1, during Aang's ride through Ba Sing Se

A peculiar animal with the head of a cat, but the body and wings of an owl. Its belly and face are covered in white fur, whereas the rest of its body is black. Nothing else is known about it.
Dragon
First Seen: Chapter 7, Book 1
The only known dragon is the one that was Avatar Roku's animal guide, the dragon that helped Aang get in contact with Roku, which in turn led to Aang's knowledge of Sozin's comet. It also has the ability, at least in the Spirit World, to communicate by giving people visions. Any other powers it may have are unknown.
Dragon Fly
First Seen: Chapter 15, Book 2 (Ba Sing Se Zoo)
The only time these have ever been seen is when Aang tried to free them, along with many other animals, from the zoo they were in, and put them into a better habitat. Once freed, however, the Dragon Fly's attacked the people of Ba Sing Se, settling themselves on the heads and shoulders of people, and in general just making a nuisance out of themselves.
Duck
First Seen: Chapter 14, Book 1
Pretty much just like regular ducks, these animals were seen at Aunt Wu's village. It's extremely, highly doubtful that they serve any purpose whatsoever.

The Fire Nation uses these bright red hawks to carry messages. Zhao was notified of his promotion to Admiral from one, and Aang received a message requesting a hostage trade from Mai's father in Return to Omashu. They must be reasonably intelligent to be able to carry messages, but nothing else is known about them.
Hermit Crab
First Seen: Chapter 17, Book 1
The only place these animals have been seen was at the Northern Air Temple. Capable of withdrawing entirely inside of their shells, the crab's only purpose appeared to be its use in a metaphor Aang used to say why Teo and his people should stay at the temple.
Hog Monkey
First Seen: Chapter 10, Book 1
Strangely, this animal does not resemble a pig, but Aang calls them Hog monkey's, so....Anyways, they don't like to be ridden, but therein lies the challenge, according to Aang at least. They were only seen in Fire Nation traps at the beginning of Jet

Library Fox

These animals, are, for the most part just like a fox, although light gray in color. They serve Wan Shi Tong, he who knows 10,000 things, and "gather knowledge" from all four nations to be added to his vast library. Sky Bison (Aapa)
Seen throughout the series
An enormous, powerful, flying, fluffy, furry, and outright lovable beast that serves as one of Aang's only connections to his people, Aapa is the only one left alive (probably). The arrow on its head appears to grow naturally, though we never find out, and Sky Bison are capable of sending large gusts of wind at their enemies using their tales (as Aapa did to Zuko in Bato of the Water Tribe, and to Mai and Ty Lee in Return to Omashu).
